Cracked-Open Merasheen Bay Oysters – Orange Blossom Honey Cocktail Sauce

Ingredients
- 12 Merasheen Bay Oysters
- ½ cup Ketchup
- 3 tbsp Orange blossom honey
- 1 tbsp Lemon juice
- 1 tbsp Horseradish
- 1 tbsp Worcestershire sauce
- 1 Garlic Clove, minced
- 4 dashes Hot Sauce
Instructions
Method:
- Carefully shuck the oysters to keep the natural sweetness and ocean flavors. Mix the remaining ingredients in a small bowl until fully incorporated.
Presentation:
- On a large platter, arrange the oysters in a circular pattern with the hinge side on the inside on a bed of salt. In the center circle, lay a small loose bunch of colorful greens then place a small bowl of cocktail sauce directly above. Around the edge of the platter, place lemon or lime wedges for garnish.
